Commercial oils (olive canola vegetable) are made to have a long shelf life. Manufacturers use a heating and bleaching process to prolong the shelf life of the oil but this process destroys nearly all of the essential fatty acids. Furthermore the oils are displayed in clear bottles to make them more attractive and sellable yet sunlight and store lighting actually contribute further to the destruction of the essential fatty acids. Look for cold processed oils sold in light resistant dark bottles to ensure the essential fatty acids are not destroyed.
