Considerazioni interessanti del Dr.Garth Davis: People dont seem to know this, but meat is highly inflammatory. Everybody seems to think that sugar causes inflammation but studies show that there is very little inflammation from carbs. The craziest study I have seen is one where they gave a group of people 1.5 liters a day of sugary drinks and compared them to a group drinking 1.5 liters of artificially sweetened drinks. As would be expected, the sugary drink group consumed more calories and therefore gained more weight. Interestingly, even though they gained weight, they did not show any signs of increasing inflammation ncbi.nlm.nih.gov/pubmed/16087988. In fact, if you actually take a group of people and feed them a high fat meal vs a high carb meal, the high fat meal develops significantly increased inflammation after the meal, the carbs do not. ncbi.nlm.nih.gov/pubmed/16219650, ncbi.nlm.nih.gov/pubmed/14668275, ncbi.nlm.nih.gov/pubmed/20067961 The fact that meat causes inflammation should be well known, but some researchers seem to sweep it under the table. One study was done trying to show low carb diets do better than low fat. They made the usual mistakes of calling 30% fat a low fat diet, etc. In the end, the low carb did not lose more weight but they had less of a drop in their metabolism. The conclusion was therefore that high protein/low carb diets are good because there is a slightly less drop in metabolism. Problem is that you have to look past the abstract. The data that was swept under the rug was the fact that the low carb/ high protein diet group had higher levels of cortisol, a stress hormone, in their urine. They also had higher levels of CRP which is a lab measure for inflammation. So they didnt lose more weight AND they were in a state of inflammation! Also, meat has bacterial endotoxins in its fibers that are released when consumed and cause an inflammatory response ncbi.nlm.nih.gov/pubmed/19755625. ncbi.nlm.nih.gov/pubmed/17991637. Time and again, meat has been found to increase CRP which is a direct risk factor for development of heart disease and diabetes ncbi.nlm.nih.gov/pubmed/17696726. When you eat animals you actually are eating arachidonic acid which is a direct precursor that the body uses to create inflammatory chemicals. Every time we eat meat we are adding to our inflammatory load. If you are healthy and eat lots of fruits and veggies, which can counteract the inflammation, then you are probably fine. But if you suffer diabetes, heart disease, rheumatoid arthritis, inflammatory bowel disease, meat is a poison to your body!
