Cookie confessions... 1. We are a lick the batter family. I know, dont judge. 2. My holiday cookie baking itch has started. We havent even made it to Thanksgiving. 3. My emergency frozen cookie dough stash is depleted and my 2 year old is begging to bake on this rainy day. Thats my excuse a week before we pack in 2000 calories in one meal that I am in the kitchen today. So anytime I bake my chocolate chip cookies I typically use dark chocolate chips (Toll House makes them) and I sprinkle just a hint of sea salt before baking. The dark chocolate off sets the white and brown sugar in the cookie and I just love the zing of salt with something sweet. I use Toll House recipe except I lower cooking temp to 350 degrees and add a minute or two to baking. Freezing the dough is a necessity. If you havent done it, try it. It lets the ingredients meld and I find the longer it freezes the fluffier, prettier, more golden the cookies bake. I roll in waxed paper, freeze, then cut when Im ready to bake. Having late night cookie dough on hand in a calamity is a must. See confession 1.
