Cooler temperatures have been trickling in and baking warm treats is one of our favorite things to do on chillier days. We recently held a Gluten Free Baking with King Arthur Flour class - our students baked all kinds of delicious goodies including Blueberry Scones with Lemon Glaze and Carrot Cupcakes with Cream Cheese Frosting, both pictured here. Many of our students have heard us say that we use King Arthur Flour exclusively because weve noticed an improvement in our breads, desserts and other baked goods, and its definitely true. King Arthur has tons of recipes, both gluten free and non gluten free, on their website so feel free to give some of them a try! Happy baking! Gluten Free Blueberry Scones with Lemon Glaze (Yield: 8 scones) Ingredients • 1 3/4 cups King Arthur Gluten-Free Multi-Purpose Flour or 2 1/4 cups brown rice flour blend* • 1/4 cup sugar • 2 teaspoons baking powder • 1/2 teaspoon xanthan gum • 1/2 teaspoon salt • 1/4 teaspoon nutmeg, optional • 1/2 cup (1 stick) cold butter • 2 large eggs • 1/3 cup cold milk • 1 teaspoon gluten-free vanilla extract • 3 ounces frozen blueberries Lemon Glaze • 1 oz. fresh lemon juice • 4 oz. powdered sugar, or as needed to thicken glaze Preparation 1) Preheat the oven to 400°F. Line a baking sheet with parchment paper. 2) Whisk together the flour or flour blend, sugar, baking powder, xanthan gum, salt, and nutmeg. 3) Work in the cold butter till the mixture is crumbly. 4) Whisk together the eggs, milk, and vanilla till frothy. 5) Add to the dry ingredients, stirring till well blended. The dough should be cohesive and very sticky. Add the blueberries and fold in gently. 6) Drop dough by the 1/3-cupful into the scone pan or onto the baking sheet. Let the scones rest for 15 minutes. 7) Bake for 15 to 20 minutes, till golden brown. Remove from the oven and let rest for 5 minutes or so before serving. 8) To make glaze, stir lemon juice and powdered sugar until combined and smooth. Add more sugar, if needed to thicken glaze. Using a small spoon, lightly drizzle on top of scones.
