Coriander Flavoured Pompret Ingredients: pomprets - 4 nos ( 300 - 350 gm) For filling - a cup of chopped coriander or Parsley leaves Green Chillies - 4 chopped Ginger - 2 tbspn Garlic - 10 cloves Lemon Juice - 2 tbl spn Oil for frying - I use Rice Bran Oil ( sunflower,Olive and mustard oild can be used ) Curry Time: Yogurt - 2 and half cups Coriander seeds - 3 tbl spn powerdered Salt to Taste Giner - 4 chopped Coconut creeam - 225 gm Onion paste - 4 tpsn Bay Leaves - 2 Green cardadom - 3-4 crushed Freenchilles - 3 silted Lemon - 1 Cooking time: Clean the pomfrets and debone.Keep it as a whole.Give slight incisions on the outside. For the filling, mix coriander,green chillies,ginget,garlic,salt and leom juice together & smear inside and outside of pomfrets. Now heat oild in a pan,lightly fry them on both sides. Now to make the curry... whish the yoghurt and coriander seeds , salt ginger,coconit cream,onion paste,green cardamom,bay leaf,peppercorn,green chillies and juice of the lemon. You need to now pur this mixture over the fish,cover and bake for 15 min. Serve hot, with steamed rice or ghee rice.
