Creole Purple Hull Peas By: David Triche 2 lbs. frozen Purple Hull Peas 10 cups Water 1 large Onion, chopped 1 bunch Green Onions, chopped 1 large Bell Pepper, chopped 2 Tbsp. Cajun Seasoning 1 Tbsp. Onion Powder 2 tsp. Garlic Powder 1 tsp. Black Pepper 1 tsp. Salt 1 lb. frozen Whole Okra 1/4 cup All-Purpose Flour 1/4 cup Vegetable Oil Place peas and water in a pot and place on medium heat. When water starts to boil, turn heat down to low. Add cajun seasoning, onion powder, garlic powder, black pepper and salt. Cook until peas are half way cooked. Turn burner to simmer. Heat oil in another pot and add flour. Make a roux to the color of peanut butter. Add onions, green onions and bell pepper and cook for 5 - 6 minutes. Add mixture to peas. Cook until peas, onions and bell pepper are done. Adjust seasonings if necessary. Enjoy!
