Curried shrimp 2 lbs shrimp 4 tbsp butter 1 tablespoon curry paste 2 sticks celery sliced 1 lg onion chopped 1/2 green pepper chopped 1 med tomato chopped 4 tablespoons flour salt and pepper 1 & 1/2 cups water 1 cup milk 2 chicken stock cubes 1 teaspoon sugar 1 tablespoon lemon juice Melt butter in pan add curry powder, chopped celery, onion and pepper saute gently 2 - 3 minutes, add chopped tomato and cook further 2 minutes, take off heat and stir in flour, salt and pepper, cook for 1 minute gradually add water and milk and stock cubes. Continue stirring until sauce boils and thickens. Reduce heat, add sugar and lemon juice simmer for 20 - 25 minutes stirring occasionally. Add shrimp and allow to just cook through do not overcook them Serve with hot steamed rice.
