DINNER FOR ONE... HEALTHY MEALS IN A FLASH: "Fish with Quinoa Pilaf" Put 1/3 cup quinoa in a pan with 2/3 cup water. Bring to the boil, reduce the heat until simmering, put the lid on and cook for about 15 minutes or until all the liquid is absorbed and the quinoa is cooked. Meanwhile saute in 1 tsp olive oil, 1/3 sliced red onion, 1 clove garlic and 1/3 chopped red capsicum. Add the cooked quinoa along with a handful of chopped fresh flat leaf parsley. Heat a non-stick frying pan and drizzle with 1 tsp olive oil. Panfry a 100g fish fillet (eg snapper or barramundi) and serve with the quinoa pilaf & a green salad.
