Dear Spaghetti Squash: I misjudged you. You are better than spaghetti, and Ive been missing out. So that you dont miss out on the greatness that has replaced my glutinous friend, noodles, heres an easy recipe that will change your mind on inviting this delicious plant into your kitchen! 1 spaghetti squash - put it in the oven in 1/2 inch of water on 375 and bake until done (about an hour). While you are waiting, combine 2 TBS olive oil (I just poured some in and didnt measure) a good handful of fresh sliced basil, a little oregano (used fresh, but dried would be fine), 1 tsp garlic salt, a bunch of fresh ground pepper, and 2 cups of sliced cherry tomatoes. I also added sliced avocado to mine. Mix it up. Get your squash out of the oven and cut it in half, scoop and throw away the seeds. Use a fork to fluff the insides ( they are easily fluffed and look like noodles. Add your topping and enjoy!
