Debs Monday Raving Roast Beef Debs Cheesy Baked Penne Pasta Skillet Corn Medley Debs French Roast Beef with Onions Ingredients: 8 slices cooked roast beef, 1/8 inch thick 1/4 tsp. salt 1/4 tsp. pepper 3 tbsp. butter 1-2 onions, thinly sliced 1 tbsp. flour 1 1/2 c. leftover roast beef gravy mixed with beef broth Directions: 1. Preheat oven to 425 degrees. Arrange beef in 9x13 inch un-greased baking dish, overlapping slices. 2. Sprinkle with salt and pepper. 3. Melt butter in 12-inch skillet over moderate heat. 4. Add onions and cook, covered, 10 minutes. 5. Stir in flour and cook uncovered, 1 minute, stirring. 6. Gradually stir in gravy into skillet, cook 3-5 minutes until slightly thickened. 7. Cover and bake 15 minutes Side dishes suggestions: Cheesy Baked Penne Pasta & Skillet Corn Medley Baked Penne Pasta Ingredients: 1/2 jar Pasta sauce (I use Ragu) 1/2 cup chicken stock 4 Tbsp. grated Parmesan cheese 1 cup ricotta cheese (about 8 oz) 3/4 cup shredded mozzarella cheese (about 3 oz.) 12 ounces Penne pasta (Cook Penne pasta following directions on box). Directions: Preheat oven to 400°. combine pasta sauce and chicken stock in large bowl. Stir in ricotta and Parmesan cheeses, then cooked Penne. Evenly spoon pasta mixture into 13 x 9-inch baking dish. Cover tightly with aluminum foil. Bake 55 minutes. Remove foil and sprinkle with mozzarella cheese. Bake uncovered an additional 5 minutes. Let stand 10 minutes before serving. Skillet Corn Medley ingredients: 4 cups fresh or frozen corn kernels 1/4 cup butter 1/2 cup chopped green bell pepper 1/2 cup chopped red bell pepper 1/2 cup chopped onion 1 teaspoon salt (I add sea-salt) 1/4 teaspoon ground black pepper Fresh parsley (optional) Directions: 1. In a large skillet melt butter. 2. Add red and green pepper and onion; saute for 3 minutes. 3. Add corn kernels, salt, and ground pepper. 4. Cook, stirring, for 3 minutes Add fresh parsley if desired.
