Set aside in a mixing bowl and preheat the oven. 2 Season the rack of lamb with salt and black pepper, and fry over a high heat in olive oil until browned on both sides. Rub the mustard over the side of the lamb, then spread the crumbs of the crust evenly on a plate and press the rack into them so that they cling well all over. 3 Place the lamb in a roasting pan and roast for 20-25 minutes, according to taste.
