Dee & Tom planned a 90th birthday party for Mom...just family & friends that they knew...Mom loved it!! A huge Thanks to them for making it happen. I made my mac n cheese for the lunch & was asked for the recipe... may have to post in two parts, but here it is: Peggy’s Macaroni & Cheese About 1 + #’s macaroni/ [Penne is a bit fancier, but adjust amount to size of pasta] [dry, use about 4 cups, 3 c. = 1 #], cooked & drained** 1/3 to ½ c. butter 1/3 to ½ c. flour 3 ½ to 4 c. milk ½+ tsp. pepper [ adjust to taste] 1 tsp onion powder/ 1 tsp garlic powder/1 tsp. mustard powder/ ¼ to 1/2 tsp cayenne pepper [ make sure you are using the powders not salt or it will ruin the entire dish] 1 # + Velveeta, cubed [ generic works very well] I also add 1 + c of cheese sauce [ canned, jar, homemade..[ even cheez whiz, Any OK] Whatever grated cheese is left over in frig…* [*Add other cheese as desired to taste, but at least 1 cup] Bread crumbs [ seasoned or not] w/ a little melted butter [could use fried onion rings crushed, potato chips crushed, or ritz crushed for topping too] Preheat oven to 359* …spray or butter pan [ I like 9X13 [larger is better] deep size] ************************************* Cook macaroni as directed on package. While mac is boiling, [or do macaroni first, drain, & set aside; **add 1 cup of milk & let it absorb into pasta… won‘t absorb as much cheese & thus dry out J] In a large sauce pan melt butter, add seasonings, & flour … cook as you would a rue. [ I like to cook to a nice golden color] Remove from heat & add milk, whisking/ stirring constantly… return to heat & bring to a boil … boil 1 minute. Remove from heat, add cheeses, stir until cheese has melted, add cheese sauce now if using. Pour in drained macaroni, mixing well. Pour into prepared pan. Add additional cheeses if desired & then bread crumbs. Bake for at least 30 minutes.. I like my crumbs to tan nicely.
