Delicious dinner tonight. It always feels a little special when you have a roast on a week night. Roast chicken with preserved lemons and sage butter. What you will need: * 1 corn fed chicken * approx 10 fresh sage leaves, chopped * 50gr unsalted butter, at room temperature * 1/4 of a preserved lemon, rinsed, centre discarded, and skin thinly sliced * 1 clove of garlic crushed * extra sage leaves Wash and pat dry chicken. Season with salt. Remove the parsons nose and any fat from the opening Combine softened butter with chopped sage and and preserved lemon skin Gently lift skin from breast area and spread half the butter mix under the skin spreading it over skin Spread remaining butter over entire chicken Place remainder sage leaves and some preserved lemon into the cavity Place chicken into a baking tray, pour approx 1 cup of water around chicken Place in hot oven and roast until chicken is cooked through and golden brown You can place potatoes and pumpkin around chicken to roast.
