Dinner tonight was Thai chicken satay with peanut sauce, Jasmine rice, mixed greens with dry farmed Early Girl tomatoes (so packed with flavor!), and not shown, grilled tamari zucchini and baby bell peppers. I combined two different recipes for both the chicken marinade and peanut sauce, and used thighs instead of breast meat because we prefer it. My husband said it was better than the satay and sauce hes had in restaurants, so I guess this ones a keeper!
