Dioenis D. Perez Mr. Bleyer, Ive eaten my lunch at Cafe Al dente religiously every day Monday - Friday for the past seven years and on occasion dinner. I have never once saw anything dirty or a hint of roaches in his restaurant, either in the bathroom or on their tables. The food quality has always been excellent and affordable. The owner (Phil) is a very personable business man and a gentleman and a pleasure to speak with, he always went out of his way to be kind to his customers. Ive seen him collect donations for our military heros serving in Afghanistan and mail over 20 priority boxes worth of food and everyday supplies for our troops during the holiday season for the past several years. Tell me who else has done this in Oyster Bay? The answer is no other merchant in Oyster Bay has done this year in and year out, like he has. On several occasions, Ive witness his kindness extended to his customers while eating my lunch while he was discussing business with them concerning a catering order for an event. Phil has always given his catering and non catering customers a good deal and has gone out of his way to make them happy they choose his restaurant to break bread in, for all kinds of occasions. I can assure you of one thing, Phil loved his customers and the community of Oyster Bay and took very good care of them, along with his staff who he treated EXTREMELY well, for over twenty years. Its a shame that local politics reared its ugly head and prevented him from having his own TV mini series which the Town of Oyster Bay denied purposely from him receiving National TV exposure, yet the Town allows other TV programing to be filmed in the community regardless of how much the locals complain about this practice. If you want to write a detailed account of what actually has taken place, do your home work or watch what takes place over the next several months at this location. Its a damn shame a person in your position with the whispers that you hear coming out of the Town of Oyster Bay concerning Fred shakedown Ippolito you havent done your own research on how he operates. For Gods sake hes a 76 year old man, he should retire and give some other young blood with a reduced salary an opportunity. In closing, I thought the TOB with its 300 million some odd budget deficits was in the business of promoting and keeping business alive and well, instead of closing them down by sending in his goon squad to shake Phil down with trumped up BS violations. After all, his goon squad has eaten in Cafe Al dente often, and I never ever saw or heard them complain about anything!!! Be an investigative reporter then report the truth of what took place here!
