Last year Kate Zaidan of @Mediterranean Imports and loyal market shopper Sean Williams took second place in our annual Gold Star Chili Cook-Off at Findlay Market. Entry form available at bit.ly/ChiliFight Heres theirs: 1 tbsp. olive oil i medium onion 1 green bell pepper 1 package soy chorizo 3 cans sliced tomatoes 1 can black beans 1 can red beans 1 tsp. chili powder 1 tsp. chipotle powder 1 tsp. oregano 1 tsp. basil 1/2 tsp. cumin Dice onion and bell pepper, and salute in olive oil over medium heat until they begin to soften. turn the heat up to high and add sausage. After a minute or two, add in the tomatoes and beans. Add spices in after cooking for about an hour. Simmer on low for at least 30 minutes. Add your favorite hot sauce or sriracha sauce. Enjoy!
