Do you know what baccala is? Salted Cod Fish.. Yea gotta soak it 3 days...get the salt out..otherwise its too salty! So anyway I make a fish salad.. Make it for my Pops..his favorite when I see him this weekend. Now I am not making it the traditional way..He makes it.. I created or did a new thing! Not that his way is bad..just I wanted new and authentic! Nobody elses recipe..my signature! HAHAHA yes! So he doesnt cook his..I cooked mine..boiled it a few. He does small pieces..I do big! He adds alot of other stuff to his..I simplify..someone told me less is better..so maybe with fish salad its true! HAHAHA! Good pure virgin olive oil is mandatory and fresh garlic a law! Kalamata olives..for sure! Lots of lemon I add capers..roasted red peppers..something he doesnt put in his fish salad..and I dont add balsamic vinegar..He does.. So not saying mine is better than my Dads or anything like that! But its different! And its time for different! Time to break family tradition! Time for Same thing but New! Same fish..prepared a different unique New way! Thank God my Pops is not a picky eater guy! Otherwise he wouldnt even try it! But us Italians eat everything! HAHAHA! And my Dad tells it like it is too! If He likes it...ya will know! He be chewing eating smiling from ear to ear! He be like..gimmie lil bit more of that Sue! HAHAHA! If he dont like it..he will just say Uhh! Thats awe full! Ya shoulda just did it the way I taught you! Chances are though..hes gonna love it! And I love to make my Dad smile! Make up for all the times I made him cry? God knows! So thats my wisdom in cooking I wanted to share with all.. Kinda hard to have family supper on internet..like they did in Acts! So I share pics! Time for upgrade an old thing made new! Same thing packaged differently!
