Lutin and zeaxanthin are powerful antioxidants which tend to build up in the retina of the eye. These two antioxidants can significantly reduce the risk of cataracts and macular degeneration. Egg yolks contain large amounts of both lutin and zeaxanthin. The concern for the high cholesterol and fat in eggs is a MYTH! When consuming high amounts of cholesterol in the diet, the liver simply down-regulates its production of cholesterol to keep the total of cholesterol in the blood constant. Any concern with cholesterol is in the consumption of OXIDIZED CHOLESTEROL. Therefore, when cooking eggs it is best to NOT BREAK THE YOLK.
