Dora’s No Meat Raw Beet Balls 1 Beetroot peeled and roughly chopped 1 celery stick roughly chopped 1 carrot peeled and roughly chopped ½ onion roughly chopped 1 clove garlic ¼ cup parsley roughly chopped 1 cup cooked brown rice (cold) 1 cup spelt breadcrumbs (can use almond meal instead) 1 egg Himalayan Salt and Pepper to taste Place all the raw vegetables into food processor and finely process. In a bowel beat egg and add cold rice, crumbs, salt & pepper and processed ingredients. Mix together with a spoon. Drop a spoonful of mixture into a bowel of Almond Meal. Roll around till coated and then gently shape into a ball (or fingers or patties). The mixture will be soft. Add extra crumbs if necessary to help hold together. Almond Meal Place a cup or two of raw almonds into food processor and turn into a rough bread crumb like consistency. Refrigerate Beet Balls and serve on a bed of fresh vegetable salad including the green tops of the beetroot. You can substitute any of the vegetables with those of your own choice and add nuts or seeds of your choice to the mixture for a more ‘nutty crunchy’ Healthy Raw Beet Ball.
