Dreamy Divinity from chsugar A dreamy, delicious take on the classic nougat candy Ingredients •2 1/2 cups C&H® Granulated Sugar •1/2 cup corn syrup, light •1/2 cup water •2 egg whites •1 teaspoon vanilla extract •1 to 2 drops food coloring in desired color •1/2 cup toasted nuts (any kind), chopped and/or dried fruit, such as cherries Instructions In heavy 2-quart saucepan, combine sugar, corn syrup and water. Cook over medium-high heat to boiling, stirring constantly with wooden spoon to dissolve sugar, about 5-7 minutes. Carefully clip candy thermometer to side of pan. Cook over medium heat, without stirring, to 265°F (hard ball stage), about 15 minutes. Remove from heat; remove thermometer from saucepan. In large mixing bowl, immediately beat egg whites on medium speed until stiff peaks form. Gradually pour hot mixture in a thin stream slightly less than 1/8-inch diameter, over egg whites, beating with electric mixer on HIGH speed about 3 minutes. Add vanilla and food coloring. Continue beating on HIGH about 5-6 minutes, scraping sides of bowl occasionally, just until candy starts to lose its gloss. When beaters are lifted, mixture should fall in a ribbon, but mound on itself and not disappear into remaining mixture. As a test, drop a tablespoonful of mixture onto waxed paper. If it stays mounded in a soft shape, it is beaten properly. Immediately fold in nuts or dried fruit; combine gently—do not over mix. Quickly drop remaining mixture from a teaspoon onto baking sheet lined with parchment paper. If mixture flattens, beat 1/2 to 1 minute more. Nougat candy must completely dry out before eating. Allow to set overnight at room temperature, in pan. Once candy dries completely, it should be cut into small squares, then wrapped in plastic and stored in airtight container. Quick Tip(s) - Instead of dropping, candy may also be poured into a greased 8-inch square pan—lined with parchment (not waxed) paper. Can be cut into pieces after drying. - The chopped nuts should be toasted to yield optimal flavor, however, dried fruits may be substituted or combined.
