During my six years in Alaska I acquired an affinity for salmon. To me Red Salmon (otherwise known as Sockeye) is the best. During my four years in Italy, I was fortunate enough to be given this recipe commonly served in restaurants over there. The Italians do amazing things with seafood! It is especially good with some Kings Sweet Bread Rolls with butter on them. Trust me, this is truly Al Dente and salmon is so good for you! Enjoy!! SALMON SPAGHETTI 6-8 oz of preferably smoked salmon 1 med size onion chopped up Several cloves of garlic to taste 1/4 cup butter 1/2 pint of heavy cream Start water for regular size spaghetti Melt butter in large frying pan Saute onion and garlic in butter and brown, avoid burning affects taste Drain well and mix in salmon keep on low heat for approx 5 mins Pour in 1/2 pint of heavy cream stir over low heat until sauce thickens This makes enough for about 4 servings of noodles which works out to 1 normal size box of spaghetti You can mix in the salmon mixture with noodles to taste or mix all the sauce with all the noodles. Some people like a small amount in the noodles others like to smother them
