EGG-LESS MUFFINS 500 ml (280 g) Wheat Flour 15 ml baking powder 2 ml salt 125 ml (105 g) castor sugar 100 g butter, melted 15 ml white vinegar 30 ml water about 150 ml milk 150 g fresh fruit, apples, pear, bananas etc, coarsely chopped cinnamon sugar for sprinkling METHOD 1. Sift flour, baking powder and salt together. Add sugar. 2. Combine melted butter, vinegar and water. Add, alternately with milk, to dry ingredients. Mix lightly and fold in fruit until just combined. Do not over-mix; mixture should still be lumpy. 3. Spoon mixture into greased muffin pans, filling each two-thirds full. Sprinkle with cinnamon sugar. Bake in a preheated oven at 180 °C for 20 – 25 minutes, until done and golden brown. Turn out onto a wire rack to cool. Serve warm with butter.
