Each time I go to the remote states of Nagaland or Arunachal, the food is a validation of my theories about Bengali food. That this is what Bengali food must have been like as recently as 400 years ago till various influences entered our cuisine. Here were simple flavours bursting on the tongue with the actual taste and texture of the greens and fish and meats, foraged straight from the forests and the rivers. And each tribe has a distinctive style of cooking yet keeping to the tradition of simplicity, using just onion, ginger, garlic and a variety of fresh or dried forest wild herbs, citric fruits and leaves and chillies. I loved it. Here is a glimpse:
