It does a lot for you, do something good today for it. #slightedge #liftmore #loveyourtemple Recipe: 1/8 c diced red onion 1/8 c diced orange bell pepper (or any color) 1/8 c diced tomato 4 kalamata olives, pitted and diced (omit if you dislike olives or substitute with 1 clove minced garlic) 1 tsp coconut oil Chopped fresh parsley 1 egg, 2 egg whites Celtic sea salt & fresh cracked pepper to taste Sauté onion & pepper in 1/2 tsp coconut oil until tender-soft. Add tomato and olives, sauté 1 min more. Remove from heat and stir in chopped parsley. In separate pan, heat remaining 1/2 tsp coconut oil over medium high heat. Beat egg and whites in bowl until fluffy and bubbly and season with salt and pepper. Pour eggs in pan and let set for 1-2 min before adding in your veggies. Add in veggies on one half of the eggs, and allow to cook over medium heat 1 min more. Fold it in half, and let cool for 30 sec- 1 min. Flip it if you can to be sure its cooked through - OR - turn heat to low and let cook for 1-2 min more.
