Easter the Italian way, with possibly the most difficult and highest achievement of Italian baking: pasta madre Colomba. colomba is shaped like a dough and slowly fermented like a panettone, there are way more eggs, butter and sugar than flour, a miracle of natural leavening and baking technique.
