Easy Recipe - Beetroot Thoran Thoran is the Kerala name of a dry vegetable dish made with grated or finely chopped vegetables. It is supereasy to make and goes with rice and roti. Ingredients 2 large beetroots (grated) 4 to 5 tsbp grated fresh coconut For splutter/tadka : 2 tbsp coconut oil/your fav oil, 1 tsp mustard seeds, 10-12 curry leaves (whole or chopped), 1 or 2 whole red chilies 4-5 shallots (chopped) 1 green chilli, finely chopped ¾ tsp finely chopped ginger 1 tsp turmeric powder ¼ tsp red chili powder (optional) salt for taste Instructions In a pan splutter mustard seeds and add the red chillies. Fry the chopped shallots and add chopped green chilli and ginger. Fry for a minute before adding curry leaves. Add beetroot and salt. Add a little water. Lid is not required if you can keep stirring occasionally. When the beetroot is cooked, add the grated coconut and cook for a minute. Beetroot can be mixed with other grated vegetables as well for this dry recipe. Garam masala and coriander leaves are optional. Who is going to try this first?
