Eating healthy at a Las Palmas sounds like an oxymoron. How can one of the ten Mexican Restaurants in and around the Nashville area possibly be healthy? Thats a simple question to answer. You have to change the way you view (and eat) Mexican food. Sure, its difficult to pass on the chips and salsa. I would have sold my soul to the devil today for some cheese dip, but over the course of five years, Ive learned to tame my palate before entering one of these gastronomic gemstones. Heres the first tip. Dont go hungry. And try on your first trip under the new mantra of eating healthy to go alone. Ask for water and a small bowl of lemons. This might sound crazy, but if you actually eat a small wedge of lemon pulp, the acid triggers your brain to want to drink. So stick with water (and fill up on a glass before you eat). While you drool at the other patron making love to their fried corn chips, remember....you can do this because Las Palmas has a ton of healthy main course options. But I always start with the guacamole salad. For $3.19 you really can not beat it. Now you have to keep in mind, tomatoes are not always in season. You basically get shredded lettuce, a small, plastic ramekin of tomatoes (they were pretty pale today), and another ramekin of under-seasoned avocado mush. So heres what you do; First, ask for a side of grated white cheese. Dump the ramekins (youll need a spoon for the guacamole) then add the juice of a few lemons, a ton of salsa, and a little sprinkling of the cheese, salt, pepper, and some hot sause, (if you are so inclined.) The salad is always refreshing and has proven to be a great scooping mechanism other than chips to get the salsa past my lips without heading straight for my thighs. I have a couple of healthy main course staples that are my favorites. If you have never tried Las Palmas chicken and rice soup...it is FABULOUS! I like to describe myself as a very discrimanitory soup advocate and brutal critic of the bowl. Las Palmas Chicken and Rice, I am very serious on this, is in my all-time 3 favorite soups. I swear, Id request it for my last meal if on death row. The broth is light and tangy. Little flecks of cilantro and tomato mingle with large chunks of white meat and a scattering of rice. Its traditionally served with half a lime, which only enhances the flavor profile of the slightly spicy broth. I ask for extra cilantro on mine and have been known to dump an entire ramekin of salsa in as well. Other healthy alternatives are the fajitas (minus the rice or beans), the new low carb burrito, and a few of their grilled chicken specials like Chicken Fiesta which is served with grilled veggies (just skip the side of cheese sauce.) I am not going to rate Las Palmas with stars because Ive had sketchy service at various locations, but the next time you really want a spicy delight but not all the fat and calories, dive into a Las Palmas and sit on your hands until your food arrives.....muy beuno... amigos....and dont forget the lemon trick!!
