Ed’s Cherry Delight Ingredients: 2 10.5 oz bags of small marshmallows 2 big cans of Cherry Pie Filling 2 Big boxes of Raspberry Jello 2 8 oz. packages of cream cheese 2 tbsp Vanilla 1 small package of lemon jello (will only be using 1 tsp. Save rest for another time) Make raspberry jello according to directions, add cherry pie filling, stir together and make sure they mix well (jello should still be hot) Put in refrigerator, pull out 2 blocks of cream cheese and leave them out to soften. Wait 2 ½ hrs then put marshmallows, cream cheese, 1 tsp of lemon jello and vanilla in a pot, heat on med/low (about 3 or 4 on most stoves) mix thoroughly. Constantly stirring until the cream cheese is all evenly distributed and marshmallows start to melt. Pull out jello and cherry mixture and pour and spread the marshmallows, cream cheese mixture over the jello and cherry mixture. Put it back in the fridge for another hour and a half to two hours. We made ours in a 10 x 15 glass pan that we bought at Winco so if you are going to make a smaller batch you will need to cut down the recipe to match the size pan you are using.
