English Muffins from The Morning Call Newspaper By Frances Quinn Ingredients 1½ t Active dry yeast 1 C warm water 2 C plain flour 1 T softened unsalted butter 1 t sugar 1 t salt 1/4 c corn meal to generously coat muffins Oil if you dont have a non stick pan Place yeast and warm water into mixer bowl and stir to completely dissolve. Leave for five minutes. Add flour, butter, sugar and salt to the yeast mixture and beat with a dough hook on low until combined about two minutes turn up mixer to med/high speed and mix until well combined about five minutes. Shape dough into a ball and place into a greased bowl. Cover an keep in a warm place until doubled in size about two hours. Fold the dough gently over on itself in three or four places and turn out on a lightly floured surface. Gently roll into a cylinder shape and device into 8-12 pieces. Shape into round shape and coat in cornmeal. Cover and let rise foe 30 minutes. Preheat a non stick pan to med heat and cook for five minutes on each side until golden brown.
