Even though I always feel like Im in a dinner rut, I actually have an even harder time finding a good lunch for myself. Im not too thrilled with made at home sandwiches, salad is the last thing I ever want to eat, and packaged frozen foods are completely unhealthy. So - I came across this recipe the other day and decided to give it a shot. I made them yesterday, froze them all, and pulled out a couple for lunch today.
