Evening how you doing ?. are you getting ready to sit and have your dinner ?.. My mothers favorite thing to do was to give us all a meal that every night was delicious and made everybody happy, it was expected that what ever Ma gave us for our dinner, it would be a meal that we all loved and raved about not after we were finishes, but during the meal, Ma delicious.... the meatballs are the best ever, better tonight than last time, what did you do Ma ?? and in fact she did play with the recipe mostly to make it better. If you asked me what were her best dishes ?.. I would say her Lasagna, never in my life, or all our lives did anyone make a better Lasagna, no way.. it was five layers high, she took whole milk ricotta, added egg, parsley, pepper, minced garlic, and blended it all together, took the first layer and spread the ricotta mix out from end to end, added sliced pepperoni, sausage meat, mini meatballs, hard cooked eggs, covered it with a layer of red sauce, then another layer of ricotta and shredded mozzarella, and again the same fillings, and sauce repeated it to five layers maybe four inches high, the last layer of Pasta sheets meat sauce and shredded mozzarella, grated cheese, and In the oven it ent, we couldnt wait to sit down to eat... her raviolis used the same filling and she shaped them into half moons, wow !!... whether it was a meat sauce, or a sauce with Mussels, oh so good, So pasta dishes of any kind, Im drooling right this minute.. her meatballs, were three meats, beef, pork & veal, Italian bread crumbs, garlic, parsley, and an egg or two, blend it all together,, shape them into 3 or 4 ounces each,, and then put them in her sauce raw, and they would cook in the sauce, two things happened, one, the sauce picked up the flavor of the meatballs,, so awesome, they would also give us soft and tender meatballs, My sons, Stephen and Frankie couldnt wait to get to Nanas for her meatball subs. Mas roasted chicken, seasoned with salt and pepper, garlic powder, and butter... roast in a low temp of 325, then to crisp it up the last 10 minute at 400... the skin was crisp, and the meat delicious.. she served the chicken with Italian roasted potatos, in the juices oat the bottom of the pan... when it came to her Braccoli, she used a flank steak, stuffed with Italian bread crumbs, eggs, salami, cheese, parsley and seasonings, roll it up tie it and cook it in her sauce, take out and oven it to crust it a little.. string off, slice it in 3/4 inch slices, sauce on it and wa-la.. again by cooking it in her sauce, the sauce would pick up a flavors of the stuffing.. theres so much more, tripe, hearts, cows brains, liver, stuffed haddock, shrimp, calamari, on and on it went and all we can tell you is its been many years since those days when we all sat down to dinner with Pa and Ma, and honest to God I can still taste the food as if she just made it.. I will give more about Mas thanksgiving dinners, Christmas eve and Christmas day dinners,. how Ma cooked her tripe, stuffed her calamari, made her stuffed lobster, Do we Miss those happy days and nights ?? my God who wouldnt... tonight it was about Mas food On Monday night I will mix holiday meals and the joy we all would feel on Christmas, Easter, etc...
