Every year I make a waldorf like chicken salad for my office Christmas party. Every year I get requests for the recipe. (This is also a favorite in my house. Josh absolutely LOVED this and Chris thinks it is to die for). It is easy to make it just requires you to plan ahead a little. Give it a try. :-) 8oz Cream Cheese 8 oz Onion & Chive Cream Cheese 4 cans Chunk Chicken 1/4 c mayo 1/2 c chopped celery (~2 stalks), I prefer hearts 2 large red delicious apples, cored, peeled, chopped 1/2 box golden delicious raisins or 1 c green grapes, chopped 1 t. nutmeg 1 tsp salt 1 tsp Adobo Seasoning 2 days before you need it: Let Cream cheese come to room temp. In 1st bowl place chicken (drained). Add celery. Sprinkle Adobo seasoning. Mix in enough mayo to wet the chicken mixture. Mix in Onion & chive cream cheese. Cover & refrigerate. (Note during this process try to break up the chicken chunks). In 2nd bowl place regular cream cheese. Sprinkle nutmeg. Mix well. Add apples. Sprinkle salt. Mix well. Cover & refrigerate. 1 day before you need it: Microwave each bowl about 30 seconds or so to soften up the cream cheese. Mix the 2 bowls together in a 3rd bowl. Fold in the raisins. Cover & refrigerate overnight. (Note during this step it is easiest to use your hands to mix it. Wait till the very end to add the raisins so you dont break them up too much). Day you serve it: Best served with crackers or on a hard bread like rye, pumpernickel or sour dough. Additions/Substitutions -Miracle Whip can be substituted for mayo for a tangier taste. -1/2 c chopped walnuts and/or 1/2 c chopped olives can be added -Tuna can be substituted for chicken -Granny Smith apples can be substituted for a crunchy texture and slightly tart taste.
