FALAFEL I honestly could not think of a better way to start off this page.. They’re delightfully simple to make, very affordable, and these cute little things will end up in your mouth in just 18 minutes, from preparation to end.. Every pita serving (2-3 falafels) will give you about 50% of your recommended daily intake of Fiber, your 25% of Iron, and the chickpeas themselves are an excellent source of Protein, Copper, Folate and Manganese, while at the same time they’re low in Saturated Fat and very low in Cholesterol and Sodium.. The parsley will give you almost 50% of your Vitamin A, and more than 50% of your Vitamin C daily intake, plus an additional 10% of Iron.. So while you’re sinking your teeth into what tastes like something too good to be true, you’ll actually be doing your body a very yummy and very healthy favour..!! INGREDIENTS: 400 gr canned chickpeas, rinsed and drained 1 garlic clove, chopped 1 cup of parsley, chopped 1 small red onion, chopped 2 tablespoons plain flour 1 tablespoon fresh coriander 1 teaspoon ground cumin ½ teaspoon paprika ½ teaspoon sea salt 2 tablespoons sunflower oil INSTRUCTIONS: Rinse and drain the chickpeas, then pat them dry with some kitchen paper.. Throw them into a food processor (I prefer using my favourite mixing bowl and blending by hand) and add the garlic, parsley, red onion, plain flour, fresh coriander, cumin, paprika and sea salt.. Give them a good stir with a spoon, and it’s time to blend..! once all the ingredients are swirled into a thick and consistent mix, it’s time to decide how big you want each burger to be - I usually measure them with a tablespoon.. Don’t forget, there’s nothing but nature included in this recipe so feel free to have a quick taste of the raw mix, and adjust with spices accordingly before you start sizing them up.. Now, heat the oil in a non-stick frying pan, place the burgers, and fry each side for about 3 to 4 minutes until they turn lightly golden, and seriously, THAT’S IT..!! Except from the tomatoes which will add some juice and nutrients to each pita, and tahini (our next recipe) is perhaps that best sauce to accompany this meal.. Now, EAT THEM..!! PEACE
