FUN TIPS..... USING MARBLES IN DOUBLE BOILER.. PROBLEM: How can you tell if water is getting too low in a double boiler? SOLUTION: When you are using a double boiler, be sure and place a few marbles or a small metal jar top on the bottom of the pot. They will start to rattle when the water gets too low and save you from scorching the pot. STOP SMOKING OIL.. PROBLEM: How can I stop oil from smoking when frying or sauteing? SOLUTION: To use butter, margarine or lard for frying or sauteing, add a small amount of canola oil to the oil to raise the smoke point. This will allow you to cook w/them w/out them breaking down and smoking creating trans-fatty acids. FRYER SPLATTERING? PROBLEM: How can I stop food from splattering when I place it into the fryer? SOLUTION: Salt tends to draw moisture from foods. If a food is salted before placing it in the fryer, it will draw moisture to the surface amd cause splattering when the food is placed into the heated oil. REDUCE FAT WHEN FRYING... PROBLEM: How can I reduce the amount of fat absorbed into foods when I fry? SOLUTION: Add a teaspoon of white vinegar tothe frying oil before you heat the oil to help seal up the food.
