Fab Recipe for Salmon Patties with Chutney: Excellent, Economical and Very Healthy! 1- 15 oz. can of Pillar Rock Wild Alaskan Salmon either red or pink is fine depending on your preference - red has a stronger flavor. Pink is great if you do not want overwhelming salmon flavor. 1/2 cup chopped onions 2/3 cup Panko Bread Crumbs 1 egg 2 dashes red pepper flakes and black pepper (or one teaspoon of each) 1/4 cup chopped fresh parsley - could be Italian flat parsley as that is often fresher - would use Fresh Market or Whole Foods for this 1 teaspoon dry Colemans Mustard (optional, but adds flavor) Topping : 8.5 oz. jar of StoneWall Kitchen Old Farmhouse Chutney also should be available at Fresh Market or Whole Foods some Hellmans Mayo (mixed with the chutney) only at the end as part of the topping Now mix everything, but the chutney and mayo in stainless steel mixing bowl making sure to fully drain and rinse your canned salmon with cold running water as this removes the excess salt. Then when consistency is thickened form into individual patties and coat each burger both sides on a flat plate that is covered with Pano bread crumbs. This would be in addition to the 2/3 cup of Panko that was part of your original mix. Cook on an iron skillet coated with olive oil until each side is nice and crusty. Lastly mix approximately two parts of the chutney for every one part of the mayo until you have enough for adding to top of each salmon burger. The chutney /mayo dressing is great, and you might wish to experiment with the consistency and also amount for each patty. You can then serve on a nice sesame bun or a bed of greens - either way is excellent! You will be amazed at how tasty, economical and very healthy this is for you!
