Factual Friday: Pork is higher in B vitamins than any other meat. It is rich in zinc, potassium and phosphorous and a good source of iron. Despite being called the other white meat, pork is in fact a red meat. There is even something to be said for the health-giving properties of pork fat (lard), which was once widely used in cooking for the special flavour and texture it imparts. In her book Delicioso, food writer Penelope Casas says that lard has been found to have many properties of olive oil, it is much lower in saturated fats than butter or beef fats and has the acids that seem to .......reduce cholesterol levels.
