Family Meal Time Series: Featured Recipe: Rustic Italian Tortellini Soup This is my favorite type of recipe – quick with easy prep, healthy and delicious! I used pork Andouille sausage, which I browned in the Dutch oven on its own first and removed. I then added a small pat of butter and browned some sliced cremini mushrooms with sea salt, freshly cracked black pepper, and a splash of dry white wine to deglaze the pan (you could just use water or chicken stock if you prefer) and removed those to the same bowl as the sausage when fully browned. I then sweated the onion and garlic, added the chicken stock and tomatoes, brought the pot to a boil, and added the tortellini. When the pasta was just about al dente, I added the sausage and mushrooms back in, as well as the fresh chopped baby spinach. I did not add the red pepper flakes since I used a spicy sausage, and I did not add extra cheese since I used a cheese tortellini. Happy cooking! tasteofhome/recipes/rustic-italian-tortellini-soup
