Fat from pasture raised animals contains a healthy Omega 3 to 6 balance. It is actually a healthy fat if the animals are not being overloaded with grains and getting enough exercise for them to maintain a natural fat level. Fat is not a bad thing, fat serves a purpose in nature, fat in excess is a bad things because the balances are out of whack because we circumvented nature. i.e. BACON from pasture raised pigs is actually good for you, and if you are not cooking with pasture raised pork lard, you are missing out on taste and health benefits that are out the roof. Its been proven numerous times in recent studies that Saturated Fat is not your enemy, and it has been proven that the contents of the saturated fats in pasture raised animals are much more balanced with the healthy contents than that of their grain fed counterparts. Its pretty simple to understand if you remove all the scientific jargon and marketing hoopla, Nature WORKs. When pigs are eating a healthy diet of various grasses and vegetation and are getting adequate exercise they are not storing excess fat and the fat they do carry is balanced out well with proper nutrients. They get these nutrients from the plants they eat, the plants get these nutrients from the dirt, the dirt is healthy because it is operating in a properly functioning ecosystem not one being raped by over planting of monoculture crops that deplete the soil of any nutrient value. Find yourself a pasture raised pork farmer who you know is raising the animals right and eat bacon with a clear conscious knowing that the meat is much more healthy for you than the chemical loaded turkey bacon crap you buy at the store, or any of the not so healthy healthy low fat items the diet food industry has been tricking you into spending money on for the last few decades. If you want to understand health, return to the source that knows it best, nature is not broken, it never was, it knows best.
