#FiAwinterenergizer #week03 Recipe 02 Having looked at all the dessert posts earlier this week I was too tempted to post a dessert recipe but unfortunately, freezing temperature and soar throat compelled me to post yet another hot n spicy recipe. 🙈 Spinach - Green Garlic Savoury cake (good ol Handvo to be precise) 😜 + STRAWBERRY chutney 😋😋 Handvo:- Ingredients: 1/4 cup of mix lentils (udad, yellow mung and chana) - soaked overnight and ground to thick coarse paste 1/4 cup rice flour 1/4 cornmeal Yogurt Spinach Green Garlic Ginger Green chillies Peanut oil Sesame seeds Mustard seeds Turmeric Coriander leaves Curry leaves Method:- Most of you know the method but since I love typing, here goes; (NO, I seriously dont) 😜 Mix the lentil paste, cornmeal and rice flour. Add yogurt, water and salt. Leave overnight to ferment. In a chopper mix spinach, green garlic, ginger, green chillies and coriander. Chop until fine. You could alternatively use a grinder and make a smooth paste but I prefer finely chopped as oppose to paste. Once the batter is ready, add the spinach-Garlic mixture and mix the batter really well. For tempering, heat oil in a pan. Pop some mustard seeds, curry leaves, sesame seeds, hing etc. and now I am really bored of typing this handvo recipe... As you may notice... Anyway, Mix half of tempering into the batter, a little on your baking dish and save some to layer on top of the batter. Add the batter into your baking tray, tap well, and finally, spread the tempering onto the batter. Stick it in the oven for about 30-40 min and never type a Handvo recipe again! 😂 Strawberry Chutney:- (now I dont mind typing that)😊 Ingredients:- Strawberries 6-7 large 2 green chillies (finely chopped) One inch ginger (grated) 3tsp sugar 2tsp lemon juice 2-3 cloves 4-5 whole black pepper 1inch cinnamon stick Pinch of chilli powder Sea salt to taste Half cup water Method:- Finely chop strawberries. Heat a heavy bottom pan, add strawberries and sugar. Let the sugar melt takes about 3-4 minutes. Add whole spices & grated ginger and let it cook for about 4-5 min. Add water and chopped green chillies. Let the mixture simmer for 5-7 min or until the water evaporates and you notice jelly like consistency. Add pinch of red chilli powder, sea salt and lemon juice. Stir well and heat for couple of more minutes. Take it off heat. Garnish with mint leaves and gobble it up with your favourite snack! 😊 PS: If things went accordingly, I had planned to make spinach crepes with strawberry-Nutella filling, 🙊but nevertheless, I am content with the much needed spice kick ! 😀
