First wine fermented fast....hope it didnt go to fast and ruin it. But it is already ready to start the clearing process (3-4 months) and start racking. It tastes tart and smooth kinda like a cabernet sauvignon and Jennie likes it...but depending on the taste after its cleared up and ready for final racking, i might sweeten it some by adding more sugar and then mixing it up and letting it clear. We shall see. Its not just a waiting game. On the other hand, the newer batch is kinda fermenting slow. It still is at 1.1 and needs to get down to 1.04 before transfer. So dunno. I hope these two dont turn out to be my first failures because I have felt pretty confident in my methods thus far.
