Food & Nut 101 gone traditional, hw to prepare Ekpang Kokou: 1st - Get ur water yam ready 2nd - Peel it, chop in2 pieces, wash & grate it. While u re @ it, put ur clean pot on fire with smal amount of water in it. As d water boils, put ur palm oil, ingredients & spices to taste. U may choose 2 use fresh, smoked or dry fish alongside periwinkles. 3rd - Roll ur grated water yam in vegetable leaves or u may cut & drop in2 d pot as it cooks. Allow 2 simmer 4 abt 20 minutes, steer gently nt 2 scatter d balls. 4th - Serve while its hot, mind u; dont rush cux it wil b xtremely hot. ENJOY UR DELICIOUS EKPANG KOKOU.
