For Bonnie. I make cookies each year to give as Christmas gifts. Both my mom and my aunt are diabetic, so I make sugar-free cookies for them. However, Ive never been satisfied with them, so this year I took a closer look at the recipe on the back of the bag of sugar-free chips. Im not used to making sugar-free stuff, so I just used that recipe whenever I made them. But I decided to take a closer look at the recipe and tweak it around a bit. Its still sugar-free but its got more flavor. I tried one on my mom and she loved it. Her exact words were Oh, yeah! Now these are right up my alley! You dont have to add the food coloring, of course, but I add food coloring to all of my flavored cookies to match the flavor. My mint cookies are green, the berry cookies are red, the pumpkin spice are orange, the coffee are brown, etc. People will say a cookie is a cookie and they taste the same regardless of the color, so adding the food coloring is just an extra step you dont need to do. Especially when there is no brown or orange food coloring, forcing you to tweak around with them until you get the color you want. But my philosophy is this: What your eyes see can enhance the flavor. If you make a coffee colored cookie to match the coffee flavor, youll actually enjoy it more. Its my own signature. So, I include it in the recipe. Your choice. Sugar Free Chocolate Coffee Cookies 2 cups of all-purpose flour 1 teaspoon of baking soda ½ teaspoon of salt 2 sticks of butter (softened) 1/3 cup of Splenda granulated sugar blend 1/3 cup of packed Splenda brown sugar blend 2 teaspoons of coffee extract Food coloring 2 large eggs 1 8 oz bag of sugar free chocolate chips Preheat oven to 375°. Combine flour, baking soda and salt in a bowl and set aside. Put the butter in a mixing bowl and let it soften. When it’s soft, add the sugar, brown sugar, and coffee extract. Add a lot of red food coloring, some yellow and a little green. Mix until creamy. If it doesn’t turn brown, mess around with the food coloring a bit until it does. Add eggs, mixing well after each one. Gradually add in the flour mixture. Add the sugar free chocolate chips and mix them in well. Drop by spoonfulls onto a cookie sheet. Press them down into a cookie shape, as the sugar free cookies don’t change at all when they’re baking. The shape you drop them in is the way they look when they’re done. Bake for 11 minutes, and check them. Let them cool on the cookie sheet for a couple of minutes, then move them to a cooling rack.
