For all you peeps in the deep freeze....I have an idea for you and I will live vicariously through you all if you do this and post pictures....MAKE A GUMBO!!!! Back in another life I call it, I used to own a Cajun restuarant in Louisiana and made a pretty mean gumbo if I do say so myself!! Shrimp and okra is my favorite gumbo. I peel the shrimp and make a great stock with the peelings and onions and celery, etc. After straining, the roux would go in. (Roux is essentially browned flour/oil and this gumbo needs very little of it as the okra mixture is so thick) While I have that going, I would start to cook down the okra (I now use coconut oil as the oil) or a good organic butter....who am I kidding, of course add the butter!! I cook the okra down a bit, and then add tomatoes to the mix and cook down some more, all the time seasoning every layer with my seasoning mix. And then the magic of the holy trinity of onions, bell pepper, and celery is cooked in for the magic. In Louisiana we would call that the holy trinity because its pretty much the base of all Cajun cooking. Keep adding seasoning as you do each layer. So after that is cooked down till its right...I cant tell you when that is, but all the slime is gone from the okra for sure : ) and the stock with the roux in it has been cooking for at least a half hour, add the okra/veggie mixture to the stock and let that simmer for a good while...maybe an hour or so on a low to medium heat.....THEN add the shrimp (I also like to add crabmeat at times)...cook only as long as needed for the shrimp to cook...just a few minutes and then leave on very low heat all day as you watch the snow, snuggle in your jammies and laugh at cat videos on youtube all day long!! Or stay in bed and make babies...your choice. And eat a bowl of gumbo every few hours for energy and stuff. Now if you want to kick it up another notch, add some infused coconut oil, or raw cannabis to the top of your bowl and enjoy. Oh, also, serve over rice...most important part! Laissez les bon temps rouler! PS. Oops, forgot the most important ingredient. Who can guess what it is?
