For dinner tonight I am making a simple ratatouille which is basically a French vegetable stew. Mine has eggplant, lots and lots of sautéed onions and garlic, tomato, peppers, salt and fresh ground pepper. Will serve with Israeli pearl couscous, which looks like pearl tapioca, but is so delicious when steam cooked. If you have always used the quick cooking couscous I urge you to try the pearl version which is what folks in Israel and Arab countries eat. Israeli Pearl couscous taste like tiny tiny dumplings.
