For dinner tonight: Sage chickpea scramble with walnuts, kale, ground cherries (from my brothers garden), minced onion, and spices. Topped with Sandras vegan parm of course and served with hash browns. Healthy, vegan, wheat-free, soy-free, protein-full, and quick - just mash (food processor) the chickpeas and add whatever nuts and veggies you have plus spices and sauté in olive oil. Sorry, forgot to take a photo.
