For tonight; I diced up a 3.5lb pork loin roast; along with a little oilve oil & rosemary; 4 cloves of garlic, 1 small red onion; 3/4 jar of a bruschetta sauce, fresh mushrooms. & some Mexican style corn.... I browned the , meat, garlic, onion, & the bruschetta in the olive oil/rosemary; in a dutch-oven; after it was browned, I added some Stubbs Brand cooking sauce, & mushrooms; & placed it in the oven for a couple hours; it wasnt thickening the way I liked; so I added a 1/2 pint of mushroom gravy Id frozen to use as bean or soup flavoring... I will add the Mexican corn close to the end of the cooking; I may even add in a couple cups of frozen peas I need to use up.... When it is finished; I plan on serving it over some egg-noodles..... This should be a real tasty comfort-food dinner....
