Forkish 40% WW, 80% hydration, Saturday night bread. Mixed at 9pm, autolysed 30 mins, then salt and yeast, 3 half hourly folds. Into the chiller set at 16C (our overnight temperature hovers around 24C here), rested at RT about 45 mins, shaped, final proofed for 50 mins, and into the oven. Have had half a slice with butter, and it was good, crumb was soft, but crust could have been crustier. Am lucky I have willing tasters, so am giving away the rest.
