Fresh Produce Safety It’s important to handle fresh produce safely in order to reduce the risk of foodborne illness. Use these guidelines to help keep you and your family safe. Separate fresh produce from raw meats and seafood in your grocery bag and in your refrigerator. Check that all fresh cut produce such as packaged lettuce and pre-cut melons are refrigerated at the store before buying to maintain both quality and safety. Wash hands and clean all surfaces and utensils with hot water and soap before and after food preparation. Thoroughly wash all produce under running water before eating, cutting or cooking even if you plan to peel them. Scrub firm fruits and vegetables with a clean vegetable brush while rinsing with running water. Washing fruits and vegetables with soap or detergent or using commercial produce washes is not recommended. Refrigerate all cut, peeled or cooked produce within two hours.
