Frog Sauce Picante... Separate hind legs from body. Boil bodies until they are tender enough to pull meat off.... Sauté yellow onion, celery, bell pepper, and frog meat that has been pulled from body portion.. Use stock thats made from boiling body section... Add 2 tblsp dark roux and 2 cans Rotel, let simmer till roux is melted... Add can of tomato sauce, garlic and chopped parsley.... Season to desired taste... Add seasoned frog legs to the sauce and simmer till legs are tender.
