From my super duper friend Ted Holland: Well,...I made my famous Braised beef tips today. It is one of the easiest recipes ever. Now, the way I cook, measurements arent really that important...maybe in baking they are, but not here. Brown your beef tips in olive oil and chop up some onions and garlic and add it to the pot. When your tips are brown, lower the heat and add balsamic vinegar. You can use the regular (reddish) or the white. Chop and add a bell pepper, some celery, carrots and quarter about 5 or 6 red potatoes (You can use any type of potatoes) .Add beef stock to just the height of the meat and veggies, do not cover them in the liquid. I add a few bay leaves, dill, paprika, thyme, garlic salt, a spoonful of soy sauce. (Really any spices you like.) Cover the pot and slide it in the oven on 350 for an hour. It should cook for 4-5 hours, but three does just fine. After each hour, check the liquids. The veggies really absorb it. Add beef stock as needed and return to oven for another hour. Its done when the meat falls apart with a fork.....dont over cook or the veggies get mushy. Serve over rice. DELICIOUS!
